I wanted to give my kids an extra boost of vitamins. They don’t really seem to like plain spinach lately (neither does my husband, I’m the lone spinach eating wolf here) so I hid it.
The one thing they really love. Pasta. They’d eat it all day. My husband says it has something to do with blood type A pos. He seems to believe that people that are A positive really love Carbohydrates. I think he’s crazy, but okay, whatever he wants to believe. I’ve read about people making spinach pasta so I figured I would give it a try. Plus, I had some Organic frozen spinach I had to use. I told my oldest daughter that we were going to have “Green Spaghetti”.
“I can’t like it.”
“It’s still spaghetti.”
“I can’t like it!”
Of course once she had a bite of it she said, “I tried it, and I like it!!”
Phew. Could you imagine if I had made all of that pasta and she didn’t? The recipe made about 2 lbs of pasta. I could have halved the recipe and still had enough for the rest of the week, now I’m going to have to get crafty.
This spaghetti kind of looks like something out of a cartoon…
It was pretty simple to make…
4 cups spaghetti
10 oz frozen chopped spinach, thawed and squeezed dry
1 Tablespoon of water
Throw it all in a bowl, mix it together until smooth and ‘pasta dough’ like…Then put it through a pasta extruder or your preferred method of pasta making.
I also made my resolution, to knit one pair of socks a month in 2011, for me. Not to be given away, gifted…none of that. I literally have to ask other people to knit socks for me, even though I am more than capable of doing it myself, so next year 12 months, 12 socks. I can do it. Can we
build knit it? YES WE CAN!! It should also help me destash some of the mound of sock yarn I have that is just begging to be knit (and continues to grow).
