I am 100!!

This is my 100th post. Can you believe it? I’ve been rambling away to you for 100 posts! Crazy. I honestly didn’t know what was going to happen when I started this, but I figured there was no harm in writing about food and if it didn’t do well, no loss, I’m still just blogging about food. To all of my readers, thank you so much for reading. Really, thank you, it means a lot to me that people read what I write. This whole blog idea was, after all, an experiment to see if I could actually do it. I gave myself a timeframe and if it wasn’t working out, no loss, but the response I have received has been overwhelmingly positive (much to my surprise).

To the military spouses who have emailed me to simply say that their husbands are deployed and that I brightened their day, thank you. That really means the world to me that I can make someone in a tough place chuckle. I have been in your shoes (maybe not YOUR shoes, especially if you are wearing Louboutins or something like that…I haven’t been in those, yet), but I do know what it’s like to have a junky day when my husband is gone and need a laugh.

To everyone who has said, “You’re really funny”, my husband doesn’t buy it, he thinks you’ve all eaten too much cake and are on some type of sugar high. I said, “I’m really funny!” and he laughed, shook his head and walked away. I secretly think that he thinks I’m a riot (especially when he comes home to a sink full of mixing bowls, 20 cupcakes and his PFT is the next day).

I can definitely say that I will continue to blog. It’s actually been a good outlet for me. I’m chatty and sometimes my 3 year old gets tired of listening to me yap away all day. I met a blog reader who mentioned to me that I write exactly like I talk, so if you’re wondering what I sound like yapping away, it’s in the reading.

And yes, my posts will get weirder and weirder the closer I get to moving, it’s the stress, it makes me silly.

In honor of my 100th post, CHOCOLATE CUPCAKES!! What else would I make?! It’s a party!

Death by Chocolate cupcakes (A.K.A. Chocolate Ganache filled chocolate cupcakes with chocolate frosting)

Adapted from Cooks Illustrated

Ganache Filling:

2 oz bittersweet chocolate

1/4 cup heavy cream

1 Tablespoon Confectioners’ Sugar

In a double boiler mix all 3 ingredients until smooth. Transfer to small bowl and refrigerate for up to 30 minutes.

Cupcake:

3 oz bittersweet chocolate, finely chopped

1/3 cup of Dutch Processed Cocoa

3/4 cup hot Coffee

3/4 cup All Purpose Flour

3/4 cup granulated sugar

1/2 tsp salt

1/2 tsp baking soda

6 Tablespoons vegetable oil

2 large eggs

2 tsp white vinegar

1 tsp vanilla extract

Preheat oven to 350 degrees F. In bowl mix together the Bittersweet chocolate, cocoa powder and coffee until smooth. Refrigerate until room temp (about 20 minutes in the refrigerator, 10 in the freezer (haha)). In bowl of stand mixer mix together dry ingredients. Mix oil, eggs, vinegar and vanilla into chocolate mixture and slowly add it to the flour mixture. Fill 12 cupcake tins. Drop about 1 tsp of ganache into the center of each cupcake. Bake for about 18 minutes. Let cool in tins for about 10 minutes and transfer to wire rack to cool completely.

Frosting:

20 Tablespoons unsalted butter (softened)

1 cup confectioners sugar

3/4 cup Dutch processed cocoa

pinch of salt

3/4 cup light corn syrup

1 tsp vanilla extract

8 oz milk chocolate melted and cooled slightly

In a food processor, mix first four ingredients for about 30 seconds. Add the corn syrup and vanilla and mix again for about 20 seconds. Add milk chocolate and mix until it is all combines, scrap down the sides of the bowl and mix again for about 20 seconds. Voila! Easy as that!

Death by chocolate cupcakes need a cup of milk to go with them. They are ridiculously yummy, but extremely chocolately.

    Congratulations on turning 100!! It’s a great feeling, isn’t it? I turned 100 on Australia Day (26 Jan) which also marked my 12 year anniversary of making the move to Oz. It was a nice coincidence. PS We share a lot of similarities: being funny, mixing bowls in the sink and the passion to continue blogging. Many happy returns :-)
