Happy 235th Birthday, USN!

You old bag.

I considered what I would do today. Carve a ship out of butter. No. Visit my husband at work. Absolutely not. Drape Navy and Gold streamers all over my house. Uh…no.

I came to the conclusion that I should do something for me and perhaps something for R-DIV.

Cupcakes. It’s always cupcakes.

Maybe some Grand Marnier Cupcakes (it was the flavor of my wedding cake) so it kind of seems fitting since some days I feel like I married the Navy.¬†Except, I don’t have any Grand Marnier. All I have is a bottle of Jameson. From commissioning. My husband is saving it for retirement. So I guess that won’t work.

hmmm…maybe not cupcakes.

Brownies. Yes. Homemade fudge-y brownies. Oh yum. Now, this is a real American treat.

Homemade Brownies

1/3 cup Dutch-processed Cocoa
1 1/2 teaspoons instant espresso powder
1/2 cup plus 2 tablespoons boiling water
2 ounces finely chopped unsweetened chocolate
4 tablespoons unsalted butter , melted
1/2 cup plus 2 tablespoons vegetable oil
2 large eggs
2 large egg yolks
2 teaspoons vanilla extract
2 1/2 cups white granulated sugar
1 3/4 cups all purpose flour
3/4 teaspoon salt

Mix the first two ingredients together in a large bowl, add boiling water and wisk until all incorporated and smooth. Add in finely chopped chocolate and wisk until melted. Smell it. MMM…

Add butter. mix. Add oil. Mix. Add eggs and mix after each making sure it is fully mixed in before adding the next. Add vanilla. Mix. Switch to using a silicone spatula. Add sugar. Mix. Add flour. Mix. Add salt. Mix.

Then add some chocolate chips (about a cup). Your choice: Semi sweet, milk chocolate, bittwersweet, dark chocolate. Make it your own. Maybe throw in some M&M’s.

Bake on the bottom rack of your oven for about 33 minutes at 350 degrees Fahrenheit (preheat). *inhale* mmm…

Cool for a little while, but warm brownies are the best.

Have a glass of milk, some whipped cream and ice cream at the ready because boy oh boy are these rich.
